    Ensis has developed a range of starter culture to enhance lipolysis, proteolysis, and control the pH during the fermentation. Our strains have been isolated from Spanish high quality products, such as Iberian cured ham, Spanish fermented sausages…

    Clean Label

    Ensis has developed a new range of products in order to substitute chemical E-numbers.

    Functional Proteins

    ENSIS has developed a range of animal proteins (pork, turkey, chicken, beef) from low-medium to high funcionality.

    Transglutaminase

    Ensis has developed a functional range of solutions with the enzyme transglutaminase to use in food products. It is specially designed for applications with pork, beef, poultry, fish, bakery and dairy products.

    Alginates

    Ensis has developed a mixture of alginates, fibers and/or proteins designed to be used in meat and fish with high water binding capacity, high cost effectiveness and good texture.

    Functional Fibers

    Ensis has developed blends of vegetable fibers in powder for injectable INNOFIBER 02 and non-injectable INNOFIBER 01 that can be used in all food products (meat: cooked ham, sausages, emulsified products, fresh meat, meat balls, fish hamburgers…

With this new generation of proteins, the market will be able to benefit from great emulsifying properties, and high retention of water and fat, as well as an improvement in the useful life of the products, thanks to the reduction of water activity, reducing waste and syneresis .
